WHAT THE PLUCK?
Gutsy and unpretentious, :pluck’s three-year culinary journey at 90 Club Street is nothing short of remarkable. Former Head Chef Brandon Teo first put the restaurant on the map with his loud and bright flavours in 2014, a finesse so bold yet controlled that gave birth to head-turning dishes such as the Chilli Crab Tiger Prawn and Pan Seared Wagyu Skirt. Without a doubt, Brandon’s gastronomical interpretations are simple and loud, uncomplicated and stylish.
And from one Teo to another, current Head Chef Nicholas Teo is showing more evidence that the current wave of Singaporean culinary talent is bursting with flair. After stamping his gastronomic mark with the Thai-inspired Tom Tum Cereal Salmon and Spicy Beef Ribeye last year, Nicholas is back with his trademark delicate stance on flavours for 2017.
Putting our most familiar memories on the :pluck plates and turning his eyes back to Singapore, come discover how Nicholas has given rou song (chicken floss) and bak kwa (Chinese jerky) a new lease in life with foie gras and scallops. Some of these carefully layered flavours were trial-run during last November’s highly successful 6-course sake-pairing dinner sessions, and we are delighted to put these well-received items permanently on our main menu.
Nicholas is also the brainchild behind the immensely popular 6-course sake pairing dinner and a 5-course wine pairing dinner that is bursting with Southeast Asian flavours.
